So we are nearing the end of May, and likewise the end of my budget challenge. It has been a Tale of 2 Halves for me as far as this challenge went. The first half of the month, I was on point. I was meal planning, prepping, and cooking everything…for both me and my boyfriend. And for those 2 weeks I stayed under budget.
The second half was another story. I didn’t go ridiculously over my budget, but I did go over. Some days, I will be honest, I just didn’t feel like cooking for all day. I still would prepare the majority of our meals, (we eat about 5 meals a day), but sometimes I didn’t cook lunch or dinner. I would grab some takeout or something convenient…(it would still be vegan and healthy, of course.) This obviously pushed my budget to the limit.
I still think that you can totally eat healthy and keep your bill down. But you would have to abstain from eating out (too much) and remain diligent to cooking. This has been a great experience in that it made me look at how much I really spend per month on food. I knew that it was a big chunk of my monthly expenditures, I just had no idea how much. And when you factor in the eating out or grabbing a quick snack, your bill can easily creep up. I will definitely use this as a learning experience and keep watching my cash outflows.
