I have successfully made it through 3 days of a plant-based diet. Sunday was slightly challenging because it was a full travel day, but I worked that out. I just took a bunch of snacks with me until I could get to food. Monday was easy because I had time to grocery shop and cook. (I actually tried out 2 new, but easy vegan recipes.) And Tuesday could have been challenging because I was on the road, visiting friends and my granddad, and I was having dinner with my girls. But with some planning ahead, I was able to stick with a meat-free diet.
Easy “Cheesy” Vegan Quesadillas:
1 tortilla, roasted red pepper hummus (or plain hummus for a milder taste), salsa, (optional ways to make a full meal) guacamole, beans, side salad
Put tortilla on a dry, medium skillet, spread hummus on half of the tortilla (not all the way to the edge), and spread salsa on the other half (not all the way to edge), let cook for a minute and fold the tortilla in half. If necessary, continue to cook until golden. Garnish with guacamole.
Chocolate Mousse:
2 ripe avocados, 1/2 c cocoa, 3/4 c agave nectar, 2 teaspoons lime juice, (optional 1-2 teaspoons of vanilla extract) all blended…the recipe was a bit too sweet for me. I would tweek it next time, maybe less agave or cocoa or more avocado.
I still need to try another everyday type meal and a dish for a special event or holiday. I still have a week to work on these.
Tuesday I knew that I would be gone all day. So I packed 2 meals: corn on the cob and Brussels sprouts & a salad. And I packed som fruit and a protein bar. I was able to be on the road for most of the day without stopping for food. (This is a good plan for anyone who wants to stick to a healthy diet and save money.) Later that night I had dinner plans with friends. I let my friends know about my food requirements ahead of time, so we picked a restaurant that we could all enjoy. There were meat dishes being passed around as well as veggie dishes. It was a great night and everyone was stuffed by the end. How could things go wrong with lots of food, wine, and good friends 🙂
